That's right, you heard it correctly: peeling the potatoes is, in fact, the first step in becoming a Chef as a kitchen hand, just as it is in the Live Entertainment Industry; you must spend your time at the start unloading and loading trucks, Prepping and de-prepping gigs before you head to the console, for some this process can be faster than others but during this time you're learning the key skills to making it in the industry, like knowing where your feet are in a truck unload, or understanding when someone says it a four-person lift, is less a suggestion and more a requirement, not just for your safety but for the safety of the others helping lift. You'll also learn how to prioritise tasks and use your time wisely, getting ahead of the day and smashing all your "peeling Potatoes" tasks.
These seemly boring tasks will also show you how to use the gear, how it goes together, what's required for it to work and what helps make it better, which you will keep doing throughout your career, so keep a good attitude towards peeling the potatoes as it never goes away it's just mixed in with a sprinkle of action as you get better and better, but time = experience, you can't rush it, just as you can't rush time. Let the time create the experience, which will then bring opportunity and add that sprinkle of action to the mix.
